Egg white and yolk: what each provides
There is a common idea that the protein is in the white and the yolk is “just fat.” It is false, twice over.

Here’s a fact that surprises many people. Raw egg protein is poorly digested: you absorb around half of what you consume. When cooked, you utilize almost all of it.
The reason is twofold. Heat denatures proteins, making them accessible to your digestive enzymes. It also inactivates avidin, a protein in raw egg white that sequesters biotin and prevents you from absorbing it.
In other words: adding a raw egg to a shake, that classic boxing-movie trope, is one of the worst nutritional ideas out there. You get only half the protein, block a vitamin, and take on an unnecessary microbiological risk.
